1. Keto Chocolate Chip Cookies
Ingredients:
- 3/4 cup almond flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup butter, melted
- 1/4 cup granulated sweetener of choice
- 1 teaspoon vanilla extract
- 1/4 cup sugar-free chocolate chips
Instructions:
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a medium bowl, mix together the almond flour, salt, and baking soda.
3. In a separate bowl, mix together the melted butter, sweetener, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir until a dough forms.
5. Fold in the chocolate chips.
6. Scoop the dough into 1-inch balls and place on the prepared baking sheet.
7. Bake for 8-10 minutes or until lightly golden brown.
8. Allow to cool before serving. Enjoy!
2. Keto Chocolate Mug Cake
Ingredients:
- 2 tablespoons almond flour
- 2 tablespoons cocoa powder
- 2 tablespoons granulated sweetener of choice
- 1/4 teaspoon baking powder
- 2 tablespoons coconut oil, melted
- 2 tablespoons unsweetened almond milk
- 1/4 teaspoon vanilla extract
Instructions:
1. In a medium-sized mug, whisk together the almond flour, cocoa powder, sweetener, and baking powder.
2. Add the melted coconut oil, almond milk, and vanilla extract and whisk until everything is combined.
3. Microwave for 1-2 minutes or until the cake is cooked through.
4. Allow the cake to cool before serving. Enjoy!
3. Keto Coconut Macaroons
Ingredients:
- 2 cups shredded unsweetened coconut
- 1/4 cup granulated sweetener of choice
- 2 tablespoons coconut oil, melted
- 2 tablespoons almond milk
- 1/2 teaspoon vanilla extract
Instructions:
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a medium bowl, mix together the shredded coconut, sweetener, melted coconut oil, almond milk, and vanilla extract.
3. Use a tablespoon to scoop the batter onto the prepared baking sheet.
4. Bake for 12-15 minutes or until the macaroons are lightly golden brown.
5. Allow to cool before serving. Enjoy!
4. Keto Peanut Butter Fudge
Ingredients:
- 1/2 cup peanut butter
- 1/4 cup coconut oil, melted
- 1/4 cup granulated sweetener of choice
- 1 teaspoon vanilla extract
Instructions:
1. Line a 9x9 inch pan with parchment paper.
2. In a medium bowl, mix together the peanut butter, melted coconut oil, sweetener, and vanilla extract.
3. Spread the mixture evenly into the prepared pan.
4. Refrigerate for at least 1 hour or until the fudge is set.
5. Slice into small squares and enjoy!
5. Keto Cheesecake
Ingredients:
- 16 ounces cream cheese, softened
- 1/4 cup granulated sweetener of choice
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup sour cream
- 2 tablespoons coconut flour
Instructions:
1. Preheat oven to 350°F and grease a 9-inch springform pan.
2. In a large bowl, beat together the cream cheese, sweetener, and vanilla extract until light and fluffy.
3. Add the eggs one at a time, beating until just combined.
4. Stir in the sour cream and coconut flour until everything is fully incorporated.
5. Pour the batter into the prepared pan.
6. Bake for 40-45 minutes or until the cheesecake is set.
7. Allow to cool before serving. Enjoy!
